Known as Panivaragu in Tamil, proso millet is a rich source of protein, fiber, and essential nutrients like iron, magnesium, and phosphorus. The mild, nutty flavor and light texture of proso millet flour make it a perfect substitute for wheat and rice flour in a variety of dishes. It is ideal for preparing rotis, dosas, pancakes, and baked goods, offering a wholesome and nutritious option for your daily cooking.

Cooking with Gaanagam Proso Millet Flour:

  1. Gaanagam Proso Millet Roti:
    • Ingredients: 1 cup Gaanagam Proso Millet Flour, warm water, salt, and a little oil.
    • Method: Mix flour, salt, and warm water to form a soft dough. Roll out into small rotis and cook on a hot tawa until golden brown on both sides. Serve with curries or chutney.
  2. Gaanagam Proso Millet Dosa:
    • Ingredients: 1 cup Gaanagam Proso Millet Flour, ½ cup rice flour, water, salt, and cumin seeds.
    • Method: Mix the flours with water to make a smooth batter. Add salt and cumin seeds. Spread the batter thinly on a hot tawa, cook until crispy, and serve with chutney or sambar.
  3. Gaanagam Proso Millet Pancakes:
    • Ingredients: 1 cup Gaanagam Proso Millet Flour, ½ cup oat flour, 1 egg, ½ cup milk, honey, and baking powder.
