Little Millet Flour Description:
Little millet flour, made from finely ground Panicum sumatrense, is a nutritious and gluten-free alternative to traditional wheat flour. Known as Samai in Tamil, this flour has been a staple in ancient diets across India and is prized for its light, slightly sweet taste. Little millet flour is rich in dietary fiber, protein, and essential minerals like iron, calcium, and magnesium, making it an excellent choice for health-conscious consumers. It is commonly used in making rotis, dosas, baked goods, and a variety of traditional Indian recipes. Its light texture also makes it suitable for gluten-free baking.
Cooking with Little Millet Flour:
- Little Millet Roti:
- Ingredients: 1 cup little millet flour, warm water, salt, and a little oil.

- Method: Mix the flours with water to form a thin batter, adding salt and cumin seeds. Pour the batter onto a hot tawa, spreading thinly like a dosa. Cook until crispy and golden. Serve with chutney.
